DESCRIPTION
The grapes, harvested late, are macerated at a controlled temperature for a day. This is followed by slow pressing and fermentation, carried out mainly in steel. After the first 3-4 days of fermentation, 20 percent of the total mass continues the process in Slavonian oak barrels with a capacity of 3 hl. For the two masses, frequent battonage keep the solid part in suspension so that, over time, elements of verticality and flavor are mixed into the wine. Straw-yellow color with ripe highlights. The aromas, harmonized by the hint of wood, range between tropical notes and acidic fruit, such as tangerine and citrus pulp. These are joined by hints of spicy smoke, roasted nuts and rosemary. The palate retains some freshness, but its centrality directs it toward a savory and salty tone. Its lingering taste brings out chalky notes, given by the tannic-acid combination.
