Sauvignon

Straw yellow with greenish reflections, mineral hints, with notes of white flowers and citrus fruits. The aromas perceived on the nose are repeated on the palate with a beautiful presence of citrine notes typical of the variety. Cold maceration on the skins for approximately 48 hours with subsequent soft pressing of the grapes, cleaning of the musts through cold static decantation. Alcoholic fermentation at controlled temperatures in stainless steel tanks. Aging Partly in barriques and partly in 1,000 liter oak barrels. Permanence on the noble lees for 15 months. Excellent with asparagus-based dishes, risottos with wild herbs and grilled fish.

The story

La Ponca stands on the hills of the municipality of Scriò, on the north-western borders of the Collio, and from there overlooks terraced rows and broad-leaved woods, surrounded to the north by the blue profile of the Julian Alps and to the south by a silver blade: the sea. In this border place, privileged by unique pedoclimatic conditions, the entrepreneur and dreamer Alex Maccan has identified the perfect opportunity to give life to his ambitious wine project: 45 hectares of woods, vineyards and arable land to help make the Collio recognized in Italy and in the world as an area highly suited to the production of fine white wines. The estate is in fact spread over an area of ​​45 hectares, of which 12 are cultivated with vineyards, while the remainder are covered by woods and meadows, a truly unique treasure chest of biodiversity which performs the important function of preserving the natural beauty of the uncontaminated territory. The La Ponca vineyards extend over 6 plots, from north to south around the Scriò area; although they have different microclimates within them due to the characteristics of the soil, altitude, exposure of the slopes, they all enjoy breeze ventilation which prevents the stagnation of air and humidity, avoiding the development of mould. These vineyards are also greatly affected by the change of season and the daily temperature range, which allows the grapes to maintain good fixed acidity, with subsequent production and enrichment of freshness and aromas.

Un racconto enoico che ha dimora nel vertice dlla qualità del Collio. La Ponca, un gioiello incastonato nel cuore del suggestivo Collio, emerge con maestosità sulle colline di Scrió, ai confini nordoccidentali di questa straordinaria regione vitivinicola. Il suo nome, un omaggio al terroir distintivo di questa zona, evoca l'attaccamento reverenziale verso la creazione naturale e la volontà di interferire con essa il meno possibile. La fondazione di La Ponca è guidata dalla nobiltà dell'obiettivo di preservare e magnificare la ricchezza enologica del Collio. La cantina si distingue per una filosofia improntata sull'artigianalità, il rispetto incondizionato per la natura e la produzione di vini biologici di altissima qualità, rappresentando un'autentica espressione di un'antica tradizione vitivinicola che abbraccia l'artigianalità, la passione e la dedizione al territorio.

Six vines are grown on the 12 hectares of vineyards, each dedicated to a wine: Ribolla Gialla, Malvasia, Friulano, Sauvignon, Chardonnay and Schioppettino. Low yields per hectare and terraced rows characterize the La Ponca vineyards, managed entirely by hand, from the planting of cuttings to the harvest. "The work we carry out in the vineyard and in the cellar - explains the oenologist Giovanni Ruzzene - is to put the vine in the conditions to give the best expression that the Collio can offer. And it is always a happy discovery to see how in this area the vine, in its simplicity, naturally performs an extraordinary work, managing to translate into the glass the richness of the subsoil, the heat of the sun to which the vineyards are exposed and the strength of the wind that comes from the neighboring mountains. We have nothing left than to work these fruits with respect and wisdom, in order to preserve all their characteristics. The result is unmistakable wines, in terms of intensity and character.
