"Sveva" Guest Pasture at Ronchi Rò
As has almost become tradition, Alessandro Pascolo returns to us with four vintages of his magnificent Merlot Sveva: 2021, 2020, 2019, and 2016. This time, there will be no tasting with traditional food pairings. The four wines will be served all together, while the four courses will be brought out one at a time. This way, we can taste, compare, and discuss together – as the true protagonists of the evening – which vintage pairs best with each dish.

- - Salt-cured tongue and giardiniera (mixed pickled vegetables)
- - Egg tagliolino, chicken consommé, and truffle
- - Marcundela risotto with marinated egg yolk
- - Honey-glazed pigeon with fondant potato
- - Slightly set custard, grilled fruit, and walnut liqueur
